Ingredients

1 pre-made pie crust

Instructions

  1. Preheat oven to 350 degrees. 

  2. Make the filling

    In a bowl, combine peaches, sugar, flour, lemon juice, cinnamon, nutmeg, and vanilla. Let sit for 10-15 minutes.

  3. Assemble the pie

    Roll out one dough disc and fit it into a 9-inch pie pan. Pour in the peach filling, dot with butter, and cover with the second rolled-out dough (or create a lattice top).

  4. Bake

    Brush the top crust with an egg wash (whisked egg and milk) and sprinkle with coarse sugar. Place the pie on a baking sheet and bake for 50-60 minutes, until golden brown and bubbly.

  5. Cool and serve
